Low Carb Chicken Au Champagne

This deliciously tangy chicken will have your mouth watering. Who knew that such decadent French cuisine could also be on your low carb diet and keep you in ketosis? If you want a quick and easy gourmet meal than this is the one for you.


  • 6 tbsp olive oil┬áseparated into 2 tbsp sections
  • 8 chicken thighs with bone and skin
  • 1/2 medium yellow onion finely chopped
  • 1 minced garlic clove
  • 2 tbsp cognac or brandy, the cheap stuff will be fine
  • 1/2 bottle of sparkling wine, the cheap stuff is best for this
  • 1/2 cup of shiitake mushrooms, chopped
  • 1/2 cup of oyster mushrooms, chopped
  • 1/2 cup of baby portobella mushrooms, chopped
  • 1/2 cup of cream
  • 1/4 cup of finely chopped chives
  • 1/2 teaspoon white or black truffle oil
  • 1/2 pound of cut asparagus
  • Salt and Pepper
