Dinner- Paleo Bowl- Beef and Vegetables

What a difference a day makes. Blood sugar is back down under 100 and body weight is staying steady.

When I take a look at the history of my body weight since I started this working plan I notice certain patterns. At first I started dropping pounds like crazy, sometimes over a pound per day. Then things started leveling off. There were many times where I stayed at a certain weight for months at a time and then all of a sudden I would drop 3 lbs. But my weight again would stay in that range for a few months before I would drop another 3 lbs. Right now I seem to be staying in the range of 169 – 171. My ultimate goal is to get down to around the range of 160 and based on my history I believe that it may take up to a year to get there if I stay on the current diet and workout plan. This is OK, but I do anticipate another 3 pound drop or more come spring time when my body naturally stops trying to store additional fat.

We ate dinner last night at the Laughing Planet Cafe on 21st St in Portland. I had a dish they called the Paleo Bowl which was mostly vegetables and absolutely delicious.
